Bake is a Guyanese sweet handheld puff bread. Bake is a Guyanese semi sweet handheld puff bread. When its golden tender outer edge is pierced, it reveals a luscious steamy doughy center. We traditionally eat Bake most often on Sunday mornings within families but it’s now available almost everyday. There are no words to truly describe the unique texture and flavor of this bread. It’s the very meaning of comfort food. I grew up on it and am still in love it like when I was five.

Bake with Egg and Bacalhau (Portuguese salted cod)
The most traditional serving style. Steamy sweet Bake is opened up and stuffed with bacalhau (a Portuguese salted cod) where we burn off a lot of the salt, mince it up and add it to eggs, scallions, onions, tomatoes, and hit it with a hint of black pepper. The perfect blend of savory and sweet.

Bake with Chana Aloo (Chickpea Potato) Curry – Vegan
We boil down chana aloo (Hindi for chickpea potato) to a fine tenderness. We take our favorite curry chili powder (the main one used in Guyana) and marry it to a roasted garlic tomato base. We then add scallions, onions, more tomatoes, magic, sweet peas, and carrots. Finally, we fill the steamy sweet Bake with it and voila, you have a hearty, healthy, delicious, meal that’s second to none on the go.

Complete absolute decadence. We take a French dark chocolate truffle and wrap it in a thin layer of Bake and flash deep fry. The truffle explodes inside and we roll it in powdered sugar. Absolutely amazing. *Only edible ever to be acknowledged as the Official Intergalactic Supreme Grand Champion of Edible Delights. This was not an actual thing until now as there is no award amazing enough to match it.

Jai’s Dahl (Lentil-bean soup) – Vegan/Gluten Free
Lentil beans are boiled to a nice tenderness. We take our favorite curry chili powder (the main one used in Guyana) and marry it to a roasted garlic tomato base, add onions, a hint of salt and magic. We mix it all together to make the perfect one-handed soup/cup for those colder days.

Potato Chicken Curry Rice Bowl
An excessively simple, staple Indian dish that we happen to have perfected. We take our favorite curry (the main one used in Guyana) and marry it to a roasted tomato base, add onions, hit it with a hint of garlic salt, and finally tender potatoes and chicken. It’s like an artist drawing a circle perfectly freehand with his other hand. This is my personal favorite. It’s so good and I couldn’t say it better twice that I had to abandon my menu rule on copy and paste.

Bibi’s Chow Mein – Vegan
We import noodles directly from Guyana. Guyana is an Amerindian for “Land of Many Waters.” Over 60 rivers including the Amazon run through Guyana and often pick up sediments along the way. The water is anywhere from clear to dark brown like Coca-Cola and even has a red tint to it in sunlight. It’s safe to drink and sweet. These waters evaporate and turn into clouds and rains on all the lands. Everything in Guyana is just lightly sweeter because of it. We take these slightly sweetened noodles and marinade them overnight in a teriyaki/soy compound and add scallions, onions, tomatoes, sweet peas and carrots. This may be the best variation of chow mein this side of the Prime Meridian.
