Best Smoke Slow smoking at low temperature takes time, but slow smoking tenderizes the meat and adds a smooth balanced smoke flavor. We smoke some of our meats for over 14 hrs. Smoking meat is an art. to do it right there are steps and details to the process. Some of these are, what type of smoker, the heat, the temperature, cooking time, moisture, amount of smoke and what type of wood? Oh yes…let’s talk about wood. The reason hickory is the most popular smoking wood is because it produces the “Best Tasting Smoke Flavor”. It is smooth and sweet with a full smoke richness. Best Sauce Now let’s talk sauce. Good strong sauce is common, and admittedly i love a good bold flavored BBQ sauce on hamburgers or hotdogs as much as the next guy (or girl), but having the right sauce on good quality meat is so important. If the meat is done right, then the sauce needs to join its flavors with the meats juices in order to form a union of wonderful tastes. It took many years, but I have created an amazing sauce that complements the flavor of the meat without masking the natural meat flavor. As you can see, we pay attention to the details. We are not a big chain. Much of what we serve is hand prepared. Our focus is to make great tasting bites of wonder for you to eat. I’ve lived in Texas, and down south is where I developed my love for great BBQ. What we serve is a variation of barbeque and other flavors from multiple states and countries.
