Santa Elenas is a food truck experience led by Chef Rodrigo Quijano who hails from the great capital of Mexico City. Mexican classics get a southwest twist using smoking techniques to create new flavors to enhance ancient traditions. Instead of Mexican street corn with boiled corn, we smoke the corn in apple wood for a unique experience. Expect changes in menu as we work with the season and local farmers, artisans, and purveyors to source products that we are are proud to work with.
