Asahi Asahi Super Dry was a direct result of extensive market research which indicated a consumer preference for a more palatable beer with less maltiness, relatively high alcohol content and a light aftertaste, that paired well with the changing Japanese diet. BTL Free Your Mind Carignan & Reisling Blend Wonderwerk Free Your Mind is a red natural wine made from a blend of 50% Carignan from Sandy Lane Vineyard Wonderwerk Free Your Mind is a red natural wine made from a blend of 50% Carignan from Sandy Lane Vineyard (Contra Costa County AVA), and 50% Riesling from Zabala Vineyard (Arroyo Seco AVA) farmed sustainably. Carignan was picked at 20.6deg brix on august 18. Whole clusters underwent 2 weeks of carbonic maceration before being pressed to tank and fermented nearly dry. Riesling was harvested at 20.4deg Brix on September 3, de-stemmed, and fermented on the skins with twice daily pump-overs and occasional punch-downs. At approximately 1/3 Brix depletion, Riesling pump-overs were instead conducted with pressed carbonic carignan, yielding a red riesling fermentation cap. The pressed carbonic Carignan was integrated into the Free Your Mind cuvee over the course of one week.
