It’s called pork roll and it’s the main character in your new favorite breakfast sammich! The best way to describe pork roll is a processed pork shoulder product originally developed as an everyman’s heat and eat, a faux ham steak. The original product was called John Taylor’s Prepared Ham” but was later recategorized by federal legislation in 1906. So, long story short: it’s a finely minced pork product that’s salty and sweet like a proper country ham… but of course it’s not ham. It’s pork roll!
