Miyazaki, Japan Grade A-5 World-Class Wagyu (10-Oz.)
The Japanese Wagyu title refers to Matsusaka Ushi, Kobe Beef, and Ohmi Beef cattle raised in the Kansai region of Japan. All three of these Wagyu types start out as Tajima Beef cattle born in Hyogo Prefecture, but are taken in as calves by commercial cattle farmers in other regions. They take on the names of Matsusaka Ushi, Kobe Beef, or Ohmi Beef depending on the region of the commercial cattle farm where they are raised. Miyazaki Prefecture is the second largest producer of Japanese Black, and only the highest quality cattle from this region can be dubbed Miyazakigyu. It is true that the Miyazakigyu Wagyu are fed diets of beer and are treated exceptionally, often with muscle rub downs or massages. In 2007 and 2012, this class of cow boasted the champion of the Wagyu Olympics held every five years in Japan. Its beautiful color, extraordinary marbling and buttery richness establish this Grade A5 Wagyu cut with a Marbling Score of 10 as literally one of the finest steaks in the world. As in official Japanese Sumo, where it is custom to present the champion wrestler with a Miyazaki cow, Le Moo is pleased to present the highest scoring Wagyu cut possible to you this evening.
