But the noodles would always be cold by the time they arrived at the island. One day, the wife discovered that the chicken soup she sent to her husband was still hot. She soon figured out that the thick oil in the chicken broth preserved heat and that the rice noodle tasted better if not boiled together with the chicken broth. The wife then started separating the chicken broth, rice noodle, and other ingredients and combined them altogether only after they have arrived at her husband’s place. The rice noodles tasted so good that the cooking method soon spread across the city. Local people named the dish crossing the bridge noodles in honor of the wife as she had needed to cross a bridge to the island every day.
